Flipping fabulous pancakes recipe

Who doesn’t love Pancake Day? We think it’s flipping brilliant! 


With lots of delicious sweet and savoury topping ideas to toss around, you can make pancakes to suit the whole family on February 25. 


Here’s Betsy Bunni’s simple recipe for you to make with the kids – just make sure those pancakes don’t get stuck to your ceiling! We’ve included some of our favourite toppings, why not let us know yours by tagging us in your Pancake Day pics? 


Ingredients (makes 12) 

100g plain flour 

2 large eggs 

300ml milk 

A tbsp sunflower or vegetable oil, plus a little extra for frying 



Whisk flour, eggs, milk and oil together in a bowl to make a smooth batter.  


Rest for half an hour if you have time, but you can start cooking straight away.  


Wipe a crepe pan or medium non-stick frying pan with oiled kitchen paper and place over a medium heat.  


When hot, pour a little batter into the pan and swirl it around to cover the base in a thin layer – add a little more if you need to.  


Cook pancakes for one minute before turning either with a spatula or with a fancy flip if you’re brave enough! 


Cook for a further minute on the other side, then remove to a plate and cover with tin foil to keep warm while you make the other pancakes.  



Topping suggestions: 



Lemon and caster sugar 


Golden syrup and lots of sprinkles  

Melted chocolate with strawberries or bananas  

Blueberries and maple syrup 

Mascarpone and raspberries 



Ham and grated cheese 

Crispy bacon and maple syrup 

Smoked salmon and cream cheese 

For something more substantial, fill each pancake with bolognese sauce, roll them up, place in an ovenproof dish, cover with grated cheese and bake for around 15 minutes until the sauce is heated through and the cheese has melted.
